Stacking fluffy marshmallows on a stick already feels fun, and once the chocolate and sprinkles come out, everyone wants in. Kids can decorate their own, adults can keep it simple or go a little extra, and nobody is stuck waiting for an oven. They’re quick, customizable, and exactly the kind of low-pressure treat that makes Valentine’s Day feel light, happy, and a little bit special without overthinking it.

Ingredients
- Large marshmallows – Use plain marshmallows, not flavored ones.
- Semi-sweet chocolate chips – You could also use milk chocolate or even dark chocolate.
- White candy melts – You can find these in the baking section of most large grocery stores, or in your craft store.
- Red candy melts – If you can’t find red candy melts, you can use gel color to tint white candy melts.
- Red heart sprinkles – Or your favorite Valentine’s Day sprinkles.
- Lollipop sticks – You can find these in your local craft store, but you could also use skewers.
- Parchment paper

Start by assembling the marshmallows. Push three marshmallows onto each lollipop stick or straw, leaving a small space between the marshmallows so they’re easier to dip and decorate.

Next, melt the chocolate chips in a microwave-safe bowl in 20-second increments, stirring well between each round until the chocolate is smooth. Be careful not to overheat, as chocolate can scorch quickly.
Hold each stick and dip all three marshmallows into the melted chocolate, gently tapping the stick against the edge of the bowl to remove any excess chocolate. Place the dipped marshmallow pops onto a parchment-lined baking sheet.

Melt the white and red candy melts in separate microwave-safe bowls. Drizzle the white candy melts over the chocolate-covered marshmallows, then repeat with the red candy melts. Immediately sprinkle the pops with the red heart sprinkles before the coating sets.

Let the marshmallow pops rest on the parchment paper until the chocolate and candy melts are completely set. Once hardened, they’re ready to serve or package.
Chef Jenn’s Tips
- Tap off the excess chocolate to prevent pooling at the base of the pops.
- Use a spoon or a piping bag for cleaner drizzle lines.
- Decorate while the coating is still wet so the sprinkles stick well.
Serving Suggestions
Serve these marshmallow pops on a dessert platter or wrap them individually as Valentine’s gifts. I love adding mini Biscoff cheesecakes alongside them for a fun and festive dessert spread.

Storage
Store the marshmallow pops in an airtight container at room temperature for up to 3 days. Avoid refrigeration, as moisture can cause the chocolate to bloom or become sticky.
