What makes this pie so irresistible is the way the tart lime juice blends with silky condensed milk, creating that signature citrusy custard. The graham cracker crust adds just the right crunch, while the whipped cream topping gives it a soft, airy finish that makes it feel indulgent without being heavy.

This is a crowd-pleaser for any warm-weather gathering, weekend dessert, or holiday celebration. You can prepare it in advance, and it always slices up beautifully to impress guests or simply satisfy your own sweet tooth.

Ingredients

Graham Cracker Crust

  • Graham cracker crumbs – You can pulse whole crackers in the food processor to make crumbs, or buy a box of crumbs.
  • Granulated sugar
  • Salt
  • Unsalted butter – You can also use salted butter; just skip adding salt.

Key Lime Filling

  • Egg yolks
  • Sweetened condensed milk
  • Fresh key lime juice – You’ll need about 12 key limes. Regular limes don’t have the same flavor, but you could use those in a pinch if you can’t find key limes.
  • Key lime zest – Use regular lime zest if you don’t have key limes.
  • Vanilla extract – You can use real or artificial vanilla extract.
  • Salt

Whipped Cream Topping

  • Heavy whipping cream
  • Powdered sugar
  • Vanilla extract
  • Key lime zest – For garnish.

How To Make Creamy Key Lime Pie

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the graham cracker crumbs, sugar, salt, and melted butter until well blended using a wooden spoon or spatula.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8 minutes, then let it cool while preparing the filling.
  4. Whisk the egg yolks until slightly thick. Add the sweetened condensed milk, lime juice, zest, vanilla, and salt. Continue whisking until smooth and fully combined.
  5. Pour the filling into the cooled crust and smooth the surface. Bake at 350°F for 12 to 15 minutes—just until the center is mostly set but still has a gentle wobble.
  6. Let the pie cool at room temperature for 30 minutes, then refrigerate for a minimum of 3 hours or overnight until completely chilled.
  7. Beat the heavy cream, powdered sugar, and vanilla on medium-high speed with a hand mixer or stand mixer until stiff peaks form.
  8. Once the pie is fully chilled, spread or pipe the whipped cream on top and finish with a sprinkle of lime zest.
  9. Slice and serve cold.
